Shinichi Sato** is a Japanese-born chef whose work has left a distinct mark on Parisian gastronomy. Born in 1977 on the island of Hokkaidō, Japan, he began his career in Sapporo before moving to France in the year 2000. In France, his first significant stage was two years at L’Astrance in Paris under Pascal Barbot. He then broadened his experience internationally, including time at Mugaritz in Spain. In 2009, Sato became head chef at Passage 53 in Paris where his cuisine earned two stars in the Michelin Guide, making him the first Japanese chef in France to achieve this distinction.
More recently, in October 2023 he opened his new restaurant Blanc (52 rue de Longchamp, 16ᵉ arrondissement, Paris) with a concept combining his Japanese sensibility and French technique, where the design, by the firm Kengo Kuma & Associates, plays a central role.
