Thomas Graham
ChefAfter making a name for himself alongside Amélie Darvas at Hai Kai and then at Aponem, where they were awarded a Michelin star, Thomas then trained at Noma in Copenhagen for 1 year and is now the chef at Le Mermoz in Paris’s 8th arrondissement.
Thomas’s cooking style is very instinctive, with a particular emphasis on sourcing and ingredients, while keeping a certain minimalism. He likes to create new dishes according to the availability of seasonal produce.
WE ARE ONA collaborated with him on the occasion of his Pop-up in the former Nadar studio during the Paris+ fair.
