Jacob Harth is the first guest chef at ONA’s International Chef Residency in Mexico City from December 8th to January 26th, 2023.
Jacob started cooking in Portland, Oregon and shortly after moved to San Francisco to work at the 3 Michelin star restaurant, Saison. Later on he returned to Portland and opened his restaurant Erizo, which received multiple national awards for chef and restaurant.
During the pandemic he was running an extremely popular popup for 1 year at the Oregon coast at an oyster farm where they were selling local seafood out of a takeout window.
Most recently he moved to New York and worked at Oxalis and not long after at the sister restaurant, Place des Fetes.
Jacob’s cuisine is characterized by working with great quality and sometimes unusual seafood products which are presented on the Raw Bar Menu and changing daily based on the availability and catch of the day.
