Coen Dieleman, hailing from the Netherlands, started his career in the kitchen aged 14. From washing dishes at a local one star restaurant to becoming Assistant Head Chef at three star restaurant Geranium in Copenhagen (named the world’s best restaurant in 2022) at age 26, he joined BRUTALISTEN as Head Chef in June 2023. With great passion and dedication he explores the best techniques to transform each ingredient into a unique dish – always showcasing respect for the ingredient as the centrepiece.
Stefan Eriksson, named Chef of the year in Sweden at the age of 32, has been driven by his extreme dedication to local produce and ingredients throughout his career as a chef. Apart from being a driving force in the knowledge-building project Exeptionell Råvara on culinary raw materials in Sweden, he has run restaurants like Matstudion, Atelier Food, Ett hem, and Restauranglabbet.
