Born in Japan, Sho Miyashita began his culinary journey in Paris with a food truck named Munchies, where he was already sharing his passion for Japanese street food. In 2019, he co-founded Haikara in the 11th arrondissement, shaking up the Parisian food scene with a vibrant izakaya that blends the culture of Tokyo bistros with the neo-bistronomic spirit of Paris.
Miyashita’s menu at Haikara celebrates bold flavors and daring creations, with signature dishes like the “24-carat” karaage, smashed cucumber kimchi, and silky tofu with crispy chili. His commitment to quality and creativity quickly earned him recognition, leading to international collaborations, notably in London, where he offers cuisine that merges Japanese roots with global influences.
Building on this momentum, he later opened Haikara Deep Fried, a Parisian counter dedicated to agemono, the Japanese art of frying, offering a range of tempuras and other fried specialties that pay tribute to tradition while embracing contemporary tastes.
Miyashita’s cooking stands out for its fusion of tradition and modernity, delivering dishes that are both comforting and exciting, anchoring his style in a new generation of chefs in full creative bloom.
