Hanz Gueco
ChefHanz is an Australian born, Paris based tastemaker, artist, and chef. After an apprenticeship at Marque restaurant, he staged at Manresa in California, followed by Ruygin in Tokyo and Frantzen in Stockholm.
Hanz moved to Paris a few years ago and became the executive chef of Verjus and Ellsworth in the 1st arrondissement. He then took up various residencies at Le Six Paul Bert and Bistrot Tontine in Paris. In September 2023, he took over and revived the famous Parisian restaurant Le Cheval d’Or in Paris, with Luis Andrade, Crislaine Medina and Nadim Smair.
His primary focus is seasonal locally produced ingredients.
