It is by putting his hands in the dough that he learns the agreements of flavors, by immersing himself in the books that he perfects his technique. First an independent chef, he opened his ephemeral restaurant Pansoul. He then participated in the opening of Polichinelle with Christophe Michalak.
It was in September 2020 that he opened Marchon, his first address. In this restaurant that bears his name, we discover a cuisine that puts vegetables at the heart of the plate. His creations are amazing and full of character.
